The history of the Fabbri world
The roots of the company have always been in the culture of oil and in the land where the trees grow. The oil mill was founded in Lucca, Tuscany, considered one of the most famous oil regions in the world. In 1965, Nivio Fabbri noticed what a treasure this land was. The family business Fabbri Lucca was born. In 1979 the company was transformed into a joint stock company. In order to meet the demands of the times, the company moved to its current production facilities in 1997. The next challenge, the enormous increase in production, had to be met - the entire area was thus once again expanded and modernized in 2019. The product range is constantly evolving, whether in terms of taste or presentation. The market is always closely monitored in order to be able to react as promptly and flexibly as possible to new circumstances. This is made possible above all by the flexible production structure. Fabbri Lucca currently sells its products mainly in Italy. But also other countries, such as

Fabbri Lucca and the creation of olive oil
A good olive oil begins with the selection of the olives. For Fabbri Lucca, an excellent extra virgin olive oil is not only the result of the pressing of a fruit, but of the whole process. The factor that most influences the sensory profile of an olive oil is its genetic origin, but the agricultural, soil, climatic and technological conditions also have an important influence on the final product. In this respect, the type and frequency of pruning has an influence on the subsequent harvest and is a key measure in safeguarding yields. In the first step of processing, the olives are harvested. There are different methods, such as manual harvesting or beating. After transport and washing, the olives are crushed into a paste, either between granite stones or in modern systems of rollers and hammers. Finally, after kneading, extraction takes place. Here the oil must is separated from the pomace.

Capannori- home of Fabbri Lucca
The small town of Capannori belongs to the province of Lucca in the region of Tuscany. The province borders the Tyrrhenian Sea to the west and the Emilia-Romagna region to the north. The town itself is now a suburb of Lucca. It has become famous mainly for the many beautiful villas in the area. But also the flourishing center and the Romanesque churches make this town so unique.
